Vinification:

Vignoles is a late budding, mid to late ripening grape for the midwest, that can reach high brix levels, while retaining its acidic profile. This makes its highly suitable for off-dry table wines with balanced acidity and alchohol profiles making these wines age-worthy.

This vintage was picked at 21 brix just as it achieved flavor ripeness and was vinified using D-47 yeast. The fermentation was arrested with 1.5% residual sugar and finished at 1.2% R.S.

This wine was aged in Stainless Steel tank for 9 month before bottling, preserving freshness and aromatics. Bottled under screwcap, this wine can age a minimum of 5 to 10 years.

Tasting Notes:

Racy acidity, fresh lemons, limes and pineapple bursting with aroma's of fresh peaches and mandarin orange. Hint of residual sugar to balance. Think margarita on a hot day. Pairs well with spice (i.e. Thai).
